Why does the football season always go by so fast? Once again, it’s Egg Bowl week, and I can tell that the trophy is dying to return to Oxford. Our recipe for this week, sweet potato casserole, is a Thanksgiving mainstay that is just as timeless as the rivalry between the Egg Bowls. Some people think you have to pick between pecans and marshmallows, but I usually add both because I think more is better.
As we assemble around our Thanksgiving table, I am grateful for our Rebel Family beyond everything else. Ole Miss has introduced me to so many amazing people who have become family, including DBC (if you know, you know!) and my close friend Evie, who allows me to make these meals. Throughout the holidays and always, love to all of you. And don’t forget, GTHMSU! LET’S RETURN THE EGG HOME FOR THE OCCASIONS!
Cinnamon, 1 tsp cinnamon, 1 can sweetened condensed milk, and 5 large sweet potatoes
-1/2 teaspoon of nutmeg
3 tablespoons melted unsalted butter
1 cup of pecans, chopped
One bag of micro marshmallows (you’ll probably use half of it)
Bake potatoes for about one hour and fifteen minutes at 450° until they are tender.
2) Remove the potato skins.
3) Using a hand mixer, combine all ingredients except pecans and marshmallows.
4. Gently incorporate pecans.
5) Transfer to a 9×13 casserole dish. Gently dust the dish with extra nutmeg and cinnamon.
6) Bake for 25 minutes at 375° until thoroughly heated.
7) Place marshmallows over the whole casserole. Broil for five minutes, or until browned and puffed.

Is it Possible to Prepare Sweet Potato Casserole in Advance?
Yes, you may make this casserole with sweet potatoes up to two days ahead of time. It’s a terrific way to start planning for Thanksgiving early! Just prepare the topping and filling separately and store in the refrigerator if preparing ahead of time. Place an airtight container with the topping into the tightly covered baking dish. Both of them should be kept chilled until you’re ready to cook.
On the big day, top the filling with the topping and bake as directed (you might need to extend the baking time by a few minutes to allow for the cool temperature).
